Ensalada de verduras con aderezo de mango

Ahora que estamos en enero del 2010, es hora de cumplir las promesas del año nuevo y comer muchas ensaladas, a continuación la fotografía de esta deliciosa ensalada y su receta.
Ingredientes
- Jicama 200 gr
- Brocoli 200 gr
- Ejotes 100 gr
- Jitomate cherry 8 piezas
- Zanahoria 2 grandes
- Cacahuate 1/2 taza
- Aderezo de mango y cacahuate 1/2 taza
Procedimiento:
Cortar la jicama en cuadros pequeños, cortar los ejotes en trozos de 5 cm, cortar la zanahoria en fideo, blanquear el brocoli, enfriarlo y cortarlo en trozos pequeños, cortar los jitomates en dos. En un tazón grande mezclar todas las verduras y agregar una media taza de aderezo, incorporar y añadir el cacahuate al final.
Para el aderezo, utilizar los mangos de una lata, descartando el almíbar: molerlos en un procesador e incorporar una taza de aceite neutro, un cuarto de taza de vinagre de arroz, una cucharada grande de aceite de cacahuate, 5 gotas de aceite de trufa y sazonar al gusto con sal y pimienta.
